german pancakes with lemon curd

This breakfast was such a big hit that we made it for breakfast with the missionaries on Saturday and then had a repeat of it on Monday morning!




German Pancakes
6 eggs
1 cup milk
1 cup flour
1/2 tsp. salt
2 Tbsp. butter, melted

*blend first 4 ingredients together. Pour butter into 13x19x2 baking dish. Add batter. Bake uncovered at 400 degrees for 20 min.
*Brush with lemon juice and sprinkle with powdered sugar.
*Can also serve with lemon curd, berries, and whipped cream
Lemon Curd
3/4 c. fresh lemon juice
1 Tbsp. grated lemon zest
3/4 c. sugar
3 eggs
1/2 c. butter

*Cook all ingredients over medium-low heat in small saucepan until thick enough to hold marks from whisk and first bubble appears on surface, about 6 minutes. Serve on pancakes. 
**Also delicious as a fruit dip or a filling for small custard pies.
